A quick, easy and delicious lemon basil soup that will give you that hint of lemon that’s missing from most other soups.
I think this soup will make a great dish to serve with a hearty meal or even a salad.
It’s full of flavor, and there’s no sugar, salt, or any other sweetener added.
It is a great addition to a hearty soup.
1 tablespoon minced fresh basil leaves 2 cloves garlic, minced 1/2 cup water 1/4 cup lemon juice (or lemon juice plus a little water) 1 tablespoon olive oil, divided 2 tablespoons fresh chopped parsley, or about 2 1/3 cups fresh basil 1/8 cup vegetable broth, divided 4-6 fresh basil stems 1/6 cup chopped fresh parsley or 1/16 cup chopped chopped fresh basil, optional (optional) Freshly ground black pepper (optional for heat) Directions: Place all ingredients in a food processor and pulse until smooth.
Season with salt and pepper.
Add to the soup, and simmer for 15 minutes.
Serve immediately, or refrigerate until serving time.
Notes This soup has a great texture when cooked in a skillet or over low heat.
You can also use a food mill or a blender to puree the soup in the slow cooker.
